I was told by the PO, also a pro rigger, that the turnbuckles should be loosened and lubed each season to prevent seizing. Does anyone do this? And if so, what lube is used?

I don't recommend the use of any petroleum-based product, as it gets on the deck.

Yes, you have three dissimilar metals in contact in the turnbuckles-- bronze, chrome and stainless steel. Lanacote is just anhydrous lanolin. Been used as a lubricant around boats for at least 2000 years.
I put a piece of tape on the threads where they meet the turnbuckles, both above and below the turnbuckle. That way you can quickly go back to your original tension. I do use a tension gauge before putting in the cotter pins, as SS wire does stretch.
Do them one at a time.
